Dine In Southall (DISH), London

We are working with Architecture00 to create a new ‘cooking academy’ in Southall. The proposals focus around community betterment through growing, cooking and eating.

The landscape has been developed from the initial feasibility study which looked at creating a Walled Produce Garden. This would be part of the cookery school and explore the educational cycle of growing, cooking and eating along the ‘Garden Street’.

There are three character areas to the landscape. The Entrance Herb Garden focuses on creating a sense of arrival while providing a suitable context to the Tudor building.

The Garden Courtyard is at the back of the building. It is defined by a sitting wall and espaliered fruit tree hedge. Directly opposite the glazed dining room is a picnic lawn which can also accommodate a temporary marque. Along the south facing side is a showcasing growing area, gardened by the academy.

Within the glazed dining room are two produce courtyards for teaching, showcasing and the kitchen, which the spice courtyard is next to. On top of the dining room is a thyme roof.
